Shrimp and Cheesy Grits

This is southern classic. It will make a grits lover out of anyone




Servings: 4

Ingredients

• 3/4 cup uncooked grits
• 6 ounces cheese, cubed
• 1 pinch cayenne pepper
• 2 tablespoons butter
• 2 tablespoons olive oil
• 2 cloves garlic, minced
• 1 tomato, diced
• 2 pounds shrimp, peeled and deveined
• 1/2 lemon, juiced
• Chicken broth
• salt to taste

Directions

1. Cook grits according to package directions except instead of using water substitue it with chicken broth. Stir in cubed cheese and cayenne pepper. Keep warm over low heat.

2. In a large skillet heat butter and oil over medium-high heat. Saute garlic and tomato until tomato begins to soften. Stir in shrimp and lemon juice. Saute until shrimp are pink. Season with salt to taste.

3. Spread warm grits on a serving platter and pour shrimp mixture on top.

Artichoke and lobster Triangles

This is an easy and tasty spread, the crostini gives it a nice crispy texture. A very elegant appetizer.



Ingredients· 1 (14 ounce) can artichoke hearts, drained
· 16 ounces lobster meat
· 1 cup mayonnaise
· 1/3 cup chopped onion
· 3/4 cup grated Parmesan cheese
· package crostini
·
Directions1. Preheat oven to 375 degrees F (190 degrees C).
2. Combine artichoke hearts, lobster meat, mayonnaise, onions, and cheese In a medium size mixing bowl. Mix thoroughly.
3. Spread the mixture on the crostini. Arrange on a baking sheet.
4. Bake for 12 minutes, or until golden brown.

Serve hot.

Banana Chip Muffins

This is a low calorie version of this recipe made with half the sugar and egg whites. These are so delicious; you'll never miss the fat.
Serving: 12


INGREDIENTS1 1/2 cups all-purpose flour
1 1/4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/8 teaspoon salt
1 teaspoon vanilla extract
2 egg whites
1 cup mashed bananas
3/4 cup light brown sugar
1/4 cup applesauce
1/2 cup semisweet chocolate chips


DIRECTIONS
1. Preheat oven to 400 degrees F (205 degrees C). Coat a 12 cup muffin tin with nonstick spray.
2. In large bowl sift together flour, baking powder, soda, cinnamon, salt, and sugar. Mix in egg whites, vanilla, applesauce, and banana mash until just moistened. Stir in chocolate chips. Divide batter into muffin cups.
3. Bake for 15 to 18 minutes or until golden and center in cooked.

Corn Salad



This is a quick and easy salad that you can make ahead of time and pull it out when you're ready to serve.


Ingredients

2 cup fresh or frozen corn kernels
3 medium tomatoes, seeded and finely diced
4 tablespoons fresh-squeezed lime juice
2 tablespoon finely chopped fresh cilantro
2 teaspoon minced hot green Chili peppers
1 teaspoon salt

DirectionsIn a medium bowl, gently combine corn kernels, tomatoes, lime juice, cilantro, chili peppers, and salt. Cover and refrigerate until ready to be served.

Yields 3 cups
